Note that on 2K AD it will be faster to query the homeMDBBL from the store objects instead.
 
adfind -b "CN=<SERVER>,CN=Servers,CN=<AG>,CN=Administrative Groups,CN=<ORG>,CN=Microsoft Exchange,CN=Services,<CONFIG DN>" -f objectcategory=msExchPrivateMDB homemdbbl
 
 
Also note that this will NOT show disconnected mailboxes. In order to enumerate those you either need to use WMI (see Chapter 17 in the Windows Server Cookbook) or use the GUI.

GUI? In Exchange System Manager drill down to the server, then the stores on that server, and then click on "mailboxes" underneath each mailbox store. You can then "export list" for each.
 
CLI? Use adfind, reporting on the homeMDB attribute. Something simple like:
 
        adfind -root -f homemdb=* displayName homemdb
