Hi Neil, As long as you have another AD integrated DNS server, you should be alright.
Some concerns to lookout for are that your DHCP servers give out another DNS server, and that any statically configured clients are update to point to a functional server. You may just need to do a little cleanup in your AD DNS zone to remove the old removed name server.
