Well, after rebooting the remote DC, fixing the DNS root hints (were pointing to itself) and rebooting the server, the Exchange 2003 forest and domain prep and upgrade were "successful".
I am now about to prepare the forest for Windows Server 2003. In the meantime, if you see anything obvious in my original post, please let me know so that I can fix it.
