MS doesn't have any published guidance on this. Heck there guidance is still specific to identical proc to identical proc. Anyone not running identical procs in DCs and Exchange have to swag it by number of cycles. But this breaks down when comparing AMD to intel especially when Hyperthreading is involved and obviously x32 to x64.
 
Basically you are going into an area where alot of work hasn't been published so you get to do your own perf tests (which is a good idea anyway) and come up with a swag and then adjust as necessary in production. If you already have DCs in a site and don't have scale testnig capability, I would recommend throwing in an x64 and then start forcing one and then another Exchange server to use the x64 and watch the loading with perf counters and SPA2 and don't forget to watch the Exchange counters too.

Is there any recommondations for the number of x64 GC to exchange 2003 servers?  We are about to start deploying 2003 domain controllers.  I would rather use fewer x64 servers.  The dit file is about 4.6 gigs.
