Did you capture DV? ...just asking...
Then load up your project in premiere pro and  just 
export your timeline.

FILE>EXPORT>AdobeMedia Encoder...
or
FILE>EXPORT>Export to DVD...
[you should have the mpeg2 codec that
came with premiere pro]
To encode 30min @6gig to MPEG2 will take a while.

If all you need is a smaller file size maybe re-render

using a different codec.
I find Quicktime-Animation[w/alpha], Sorenson3 & 
DV/DVPRO settings are fine for small file sizes. And 
can be moved from windows to mac and back with 
, I have found, no problems.
