Possible but hard.  You need another Exchange Server to do it.  From the

The procedure to restore one or more individual mailboxes (or messages or
folders within a mailbox) requires the use of an Exchange Server that is
separate from your current Exchange site. This separate server must have
sufficient disk space to restore the entire Information Store. The
procedure is as follows:
   1.      Set up a Windows NT server to be your individual mailbox
     recovery server. This server should have the same version of NT with
     the same or higher service level. Ensure you use a unique machine name
     within your NT domain.
   2.      Install the same version of Exchange Server at the same or
     higher service level. You must configure the Exchange Server with the
     same organization and site name (but you will have a unique server
     name). Also, it is important that you do not select Join Existing Site
     during the installation. Select Create a New Site. Otherwise, you
     could end up with two sets of mailbox data for the same users after
     completing this procedure.
   3.      Install the same version of the Exchange Application Client at
     the same or higher service level.
   4.      Use the Exchange Application Client to restore the Information
     Store for the Exchange Server containing the individual mailbox to be
     recovered. Follow these steps:
        a.      Create a TSM options file with the same node name and
          parameters as used by the Exchange Application Client on the
          original Exchange Server. If PASSWORD GENERATE is used by the
          Exchange Application Client on that server, you might need to use
          the DSMCUTIL program on that system to obtain the current
          password for that node. You should not use PASSWORD GENERATE on
          this machine.
        b.      In the Exchange Application Client GUI:
             i.      Select the IS database and the TSM server icon
               representing the options file with the correct node name and
               TSM server information. This was created in step 4a.
             ii.     Select the Restore tab.
             iii.    Select the Show All button to get a list of the backup
               objects for that node.
             iv.     Select the Information Store database you want to
               restore. This also includes any associated incremental
               backups or differential backups as required. Select the
               Restore button.
   5.      Run the DSIS consistency checker, which populates the Directory
     Service with information from the restored Information Store database.

     Microsoft Exchange Server documentation.
   6.      Log onto the administration program and assign permission to the
     mailbox or public folder you want.
   7.      Log into that mailbox on the Exchange client.
   8.      Copy all mailbox information to an Export file to give to the
     user for whom you are doing the restore.
   9.      Instruct the user on how to load the mailbox from the Export
     file.

Does anyone know weather it is possible to restore a single mailbox and
have
you tested it?
