Tom, look at http:\\www.commvault.com. They have a product which provides the ability to recover sharepoint at the document-level.

There are supposed to be document-level tools available (third party) for Sharepoint, but they sound a lot like MS-Exchange brick-level recovery to me. To my knowledge, neither product provides an explicit API for individual item backup and recovery, but I could be wrong.
