include c:\folder\*.* copygroupname

(You should check the client manual for
the usage of wildcards the sample above will include the files
in c:\folder, but won't include files in c:\folder's subdirectories)

You can create a copy group with zero retention. Include the folders that
you
don't want backed up in the new group, and run an incremental to rebind
them.
Then, exclude the folders from backup, they will expire at the next
incremental.
(Only files still active in the folders will be rebound, so you may still
have
some inactive data that will follow your default retention)

I know you can exclude certain folders from being backed up, but
is it possible to remove certain folders from a clients filespace after
they have been backed up

Otherwise I would have to delete the entire filespace, set up my
excludes and rebackup the servers drive that related to the filespace
