The date against which the conversion is listed in the UI, will be the date 
on which impression occurred as GCLID is generated at the impression time. 
Please check this

for details about GCLID. That said, even if the actual time of conversion 
is on the next day, AdWords UI will show that in the previous day if the 
GCLID was generated on the previous day. Does this explain the discrepancy 
in your case? To find out when the GCLID was generated or against which 
date the conversion will be displayed in the UI, you can download the 
CLICK_PERFORMANCE_REPORT

 which 
has stats aggregated at each click level. The Date 
<https://developers.google.com/adwords/api/docs/appendix/reports/click-performance-report#date>
 field 
will indicate the time of the impression. 

You will not be able to add conversions with conversion time in the future.
