1) Is there a full taxonomy to identify which Google Affinity/In-Market/Demo
names based on CriterionIDs?
Below are documentation you can use as reference to map a category to their
respective IDs :

Google Ads API : Affinity / In-Market
As for the Demo names, could you further elaborate on this? Do you have any
screenshots or documentation that you can share related to this?
2) In the ValueTrack page, it is mentioned that there are labels for keywords
and audiences would show up with a format as such 'kwd-123:aud-456'. Despite
that it looks like criterion IDs in our accounts don't come with kwd and aud
prefixes. Let us know where to access both ID fields for SEM campaigns where
both kwd and aud targeting are applied?
You can retrieve more details related to prefixes using the below options :
AdWords API : Using the services mentioned (criteria prefixes) here
Google Ads API : You can refer to this guide, and into the ConstantDataService
section, for the various options (GoogleAdsService) you can use
In addition, since you are also referring to "where to access both ID fields
for SEM campaigns where both kwd and aud targeting are applied", you can refer
to this AdWords guide and Google Ads API guide, in their {target-id} section on
which reports to extract the said parameter and its values.
