I do that with corn tortillas and diced jalapenos and onions added to the eggs.
 Fried in butter.
Damn 12:08 and lunch is not here yet...

My wife has been watching a cooking show on Netflix. I can't recall the whole
title, but it's "Nadia's something something".

In the first episode she makes this thing with scrambled eggs and tortilla
rolled up.....basically a different method of breakfast burrito. She called
for sun dried tomato paste on the inside of the tortilla, but I don't have that
so I used a blend of Sriracha and ranch dressing. Would highly recommend this.
Her method worked well and was pretty dang easy.

Sounds like my instant lunch. Toaster oven quesadilla. Shake grated
“Mexican cheese” on one side of flour tortilla, fold over, put in toaster oven
until it gets a little crispy, eat. Not home made, but pretty tasty for almost
no work. I’ve also got a bag of Xochitl brand blue corn tortilla chips, my
favorite store-bought chips.

We can’t all be gourmet chefs.

Refried beans cooked with chorizo...cook chorizo first and then add
beans...mixed them up and cook for a few minutes....serve with homemade flour
tortillas....yum yum
