A 6" standing seam is way taller than anything I've ever seen. The ones I'm familiar with are 2" at the most.

We have used a small 2-block non-pen on a rubber mat, like one of these:

I’m talking about a small antenna like an SM, with minimal wind load.  If the roof has zero or very little pitch, and you put it on a rubber mat, it won’t go anywhere.

 

Is this a fancy building and roof, or a crappy farm building where you can lag through the metal roof into wood rafters or purlins?  In that case, we have lagged short pieces of strut to the roof and then used spring clips and bolts to secure a J-pipe, tripod, etc.  You can also use W-shaped wall mount brackets to attach a galvanized pipe, and then mount stuff to the pipe.

Depends on the exact style but we usually do a standard non-pen mount on a mat with clips like these to keep it from sliding: 

 

 

Or sometimes a tripod bolted to the clamps if it’s a light enough load.   Or some other combination.
