Don't tell the tinfoil hat crowd about all the bayesian filters and automatic keyword / formatting matching that prety much *every serious ISP* puts their port25/smtp email through, via spamassassin or others...
Maybe I have it on my mind because I've just finished setting up a shiny new postfix + spamassassin + dovecot server , but there's a myriad of things you can feed incoming SMTP through to filter it before it lands in a mailbox's Maildir.
