Just to pass along what I found
In Exchange 2016 there is an issue with header formation when manually setting an email address. Scenario: The particular issue only happens when the domain name is the same both internal and externally. Problem: Headers will form with a reference to the name and ip address of the internal domain. This will cause problems with delivering email to Amazon SES services without a bounce back. Solution: Utilizing the alias box in exchange will force the email address to be changed by the default email address rule. This will result in the correct formation of the headers and successful email delivery.
