One of our neighbors takes it to a local butcher shop that mixes the meat with domestic pig before grinding it into sausage. The biggest difference is the amount of fat; the wild animals are very non-fat/dry.

They are gamey at over 50lbs...the guide we had hunts with bow...I don't own any weapons other than brain and eight limbs .
