Why probability theory?
Because of the numerous math results (starting with Cox's) arguing
that probability theory is the only sensible way to represent
uncertain knowledge ...

I'd rather not to resume this debate, but your assertion is too
strong. All the results, including Cox's, are based on certain
assumptions, which are not accepted by everyone.
