This is really all about anthropomorphisation. There's not much detail on this robot, so I would guess that it's ability to detect body postures of humans is just something hard coded into the system (I've tried doing this myself, and it does work to some extent).
However, if you're going to do this properly with the system learning autonomously initially it just needs to experiment with its own body (play) and construct a theory of itself and how it moves, similar to the Cornell "starfish" (http://ccsl.mae.cornell.edu/research/selfmodels/morepictures.htm). This "theory of body" can then be mapped onto patterns of optical flow observed whilst interacting with other people (a kind of mirror system). In this way even with quite minimal or noisy visual information the system is able to robustly estimate body postures. The interesting side effect of this is sometimes the system makes plausible mistakes by superimposing the model onto creatures or objects with a non-anthropomorphic body layout. As humans we do this all the time.
