Yes, that's a bit annoying. We'll have that in our next version. Until that is released, you can configure the actual time to be editable in the old backlog.

Also, is there any way to customize the graphs with custom
calculations or even just to show graphs of totals or something?

What about a field in a story that sums up all the actual time of a child tasks? Still not 'one number' but I guess to check your estimation accuracy, you need to go through story-by-story anyway.
