Because you're sending them as MIME multipart messages rather than
just plain text.  If you're using the Gmail web client, try composing
them using the "Plain text" mode rather than the "Rich formatting"
mode.

The standard is to wrap at 78 columns, but it's customary here to wrap
at 70 columns to allow for a few levels of quoting.
