Jul- You never know the grade out of a stockpile if you just have volume (tonnage) out. Also stockpiles may segregate by grade, particularly if grade is variable by size fraction or density. I you have room the best solution is generally to zero stockpiles often. (i.e. build a stockpile, reclaim it completely, build another, reclaim it completely, etc. Generally about 1 month is a good target size for each stockpile.) If you have 1 big stockpile and just build and reclaim from it, you will almost surely have the negative grade problems you mention.
