That's because those are covered by the resolvconf manpage which is
marked as a SEE ALSO in the interfaces one.

Title:
interfaces man pages missing crucial options
Status in “ifupdown” package in Ubuntu:
Won't Fix
Bug description:
The interfaces man page
0 jan@osprey:~$dpkg -S /usr/share/man/man5/interfaces.5.gz
ifupdown: /usr/share/man/man5/interfaces.5.gz
0 jan@osprey:~$zgrep dns- /usr/share/man/man5/interfaces.5.gz
1 jan@osprey:~$
Does not mention any basic options, especially now that resolvconf gets them
there, such as dns-search, dns-domain, dns-anything.
