I once watched an old timer stuffing a cylinder full of clothesline
through to spark plug hole to keep a Chevy six's valves in place while
he replaced a broken valve spring.

I plan to change valve springs on a 1750 engine without removing the head.
I will be using compressed air to keep the valves shut during the procedure,
but when it comes to this sort of work I want suspenders to go with my belt.
One thought I had was to put a rare-earth magnet on the end of the valve stem
during this procedure as a back up so that if my air pressure goes away, the
valve can't drop into the cylinder.
However, I'm not sure that the valves are sufficiently magnetic for this to
work, hence my question.

I believe they are. Be careful with the compressed air, though -- it
will hold the valves closed in place, but once you knock one down
(open) far enough, the airflow won't push it back, and you might lose
enough pressure that some others fall, too, depending on your
compressor flow. Ask me how I know :)
