Once you get them set to the stock clearance cold, they won't change much  
and you will get the best performance.  .019 and .021" are correct stock  ga
ps for your engine, but some enthusiasts close them up by .001".  As  valves 
wear they tend to stretch their stems before breaking, so it's a good  idea 
to check the gap every 10,000 miles or so and reset, if desired.   If the 
valves have stretched considerably, then they must  be replaced.

Did you measure them with a cold engine?  i.e. left  overnight.

Personally I'd leave them.  Too large a clearance is  better than not 
enough,
it's just that you are not getting optimal valve  opening.  Doubtful you
would ever know it though, unless it's a race  car.

You could also try a different set of  feelers.

I'm  installing used Euro carbureted cams on my now-carbureted 76  Spider's
engine. According to my documentation* the intake clearances  should be
around
.19 and the exhaust should be around .21.

EVERY  intake clearance is within tolerance varying between .185 and  .195.
And
EVERY exhaust clearance is outside of tolerance varying  between .22 and 
.23.

Do I need to go through massive shim gyrations? Or  am I OK?

You have all basically confirmed my thought that  1/1000 of an inch will not
make that big a difference on the exhaust  valves. This is good news in 
that I
don't have a big shim kit lying  around.

I am amazed at how well made these cams must be! I when I put  on these
replacements after removing the FI type cams, I expected a great  deal of
variation but there is virtually none. Especially amazed as the 70s  were a
really bad time for car making for every company.

Now I can  move on to the rest of the projects...two synchros, transmission
seals,  diff pinion seal, transmission mount, springs and shocks for the  
rear,
completion of the carb conversion, and many others. I hope to have  the car 
on
the road this spring.
