The low side is the tube going to the port labeled "S" for suction on the compressor. Don't use the dehydrator: that's on the high side and would be a Really Bad Idea.
Make absolutely sure you're charging to the correct port. IIRC the original Alfa R12 fittings were both the same size. If someone has retrofitted the car to R134A it's entirely possible they put the conversion fittings on the wrong ports or did some other bonehead move to mess things up. Piece of advice: I do most of the work on my Alfas myself, but I've learned there are a few jobs where it's worth the money to just have a pro do it right. AC work is one of those. It's easy to get a system working sort-of-right, or working for a little while, but do get it working well and long-term it takes tools and expertise most folks don't have at home.
