I've no experience with removing old sound-deadening material from a car,
so I can't help you there.

There seems to be a bunch to pick from:

things of Dynamat Hoodliner (http://www.dynamat.com/brands/hoodliner/) but
I'm sure that it will not look original with the reflective side showing.
