Imo this is more than a documentation issue than anything else. It is not
unusual for services not to be generally available/creatable/usable by the end
user. In some cases they are used internally by the application for specific
purposes. In other cases the service may not even have a concrete 
implementation. 
Certainly some of the ones below fall into one or other category. 

It should also be noted that some of the service below are new and purposely
unpublished because they are not yet mature enough to be fixed

So I would thing the only ones there is a real issue with are
com.sun.star.ui.WindowStateConfiguration" or
        "com.sun.star.packages.zip.ZipFileAccess as you say these crash
but... I suspect that these also are not meant to be created by the user or at
least require parameters

npower->jsc you're still the man for api & documentation?
