Ok, so on both the problem exists, which means that it's a problem with the gtk2
printing dialog. So could you log a bug at www.gnome.org about this (or
bugzilla.redhat.com for the gtk2 module), and mention your findings with evince.
A likely workaround is to use tools->options->openoffice.org->view and tick "use
openoffice.org dialogs" which will set OOo to revert to using the traditional
file and print dialogs.
Closing as "invalid" because it's a problem with in gtk2 for that dialog, not
OOo's (well my/fedora customized varient) specific use of that dialog.
