And how do you "insert" a hyperlink?
There a at least three different ways to do that in OOo (and all in the end
apply a character format)

* AutoCorrect
* Format|Character → Hyperlink
* Insert|Hyperlink
* Toolbar Button

Other character attributes can be "inserted" using
* AutoCorrect
* Format|Character
* Toolbar Button

I still don't think there's a fundamental or even noteworthy difference.

Insert "foo *bold*<enter>" (with autocorrect enabled, or give it a color or a
hyperlink, doesn't matter at all), then place the cursor at the end of bold and
continue typing. What you add is bold/colored/hyperlink/whatever. 
I don't think there is a difference in terms of what the user expects.

(note that both the hyperlink and bold autocorrect are smart enough to reset the
format when the user continues typing immediately - before pressing <enter> in
that example)
