The export of the author field looks good to me (has been fixed for OO 2.1, see
issue 47129).
The date fields must be exported as "plain text" (is not a field anymore in doc
format) because MS Word does not support "fix date" field.
Format problems with date/time fields in MS Word format are tracked as issue
29646.
