The language is a setting stored into the document. The default language in the
application is for new documents, not for the existing ones.
There are many places where the language is specified. Usually, changing the
language of the Default paragraph style will do what you want. You can also
select all the text, and change it into Format > Character. That's because you
could select only one word or one sentence, and specify a different language
for that word or that sentence.
