There is a fast (but unorthodox) way to do label merge (or mail merge) on a 
single document (no multiple documents as output).

This works using openoffice 2.0 beta.

The following description is for labels but it should work the same with mails:
1. Create your label template as usual (File->New->Labels)
2. Arrange your datasources and all that.
 When you want to do the merge
3. Tools->Mail Merge Wizard
4. Press "7. Personalize document"
5. Press "Edit individual document"
6. Voila! you can print or save the resulting merged document.

 And all that with fewer clicks than with word. 

 If somebody makes the workflow from 3 to 6 with a simple button then all
the workflow will be.
1. Open document with labels or mails template
2. Click "Data Merge"

The alternative is to try and try and try all the suggestions at various
forums and help sites (without much success may i add). I have tried 
them all and the workflow would be to difficult for a clueless user to do, or
it would produce multiple output files.

 With the above consider this issue closed (in an unorthodox way).
