In general, the content of user data will be inserted.
Did you fill the fields at Tools - Options...- OpenOffice.org - User Data?
To replace the fields after:
- Double click to the field which has to be replaced
-> The "Edit Fields" dialog will appear
- Disable the Check check box at the bottom "Fixed content" and close with OK
The point "Read only" is not reproducible for me.
I was able to modify the fields from your document.
