2007 -------
It seems that custom metadata is lost in meta.xml when saved by Oo version 2.3.
Here is a description±
1 ) Create a spreadsheet with Open Office.
2 ) Save it (In my case K:\OSDTest\testnew.ods)
3 ) Rename it to testnew.ods.zip
4 ) Unpack it with the standard unzip program in Windows XP
5 ) Open the created directory testnew.ods
6 ) Open the file "meta.xml" with a XML editor (In my case XML Notepad 2007
version 2.4.2670.22266)
7 ) Insert an element "meta:user-defined" within element "office:meta". As
described in: 
http://docs.oasis-open.org/office/v1.1/OS/OpenDocument-v1.1.odt
8)  Give it the value "Hello world"
9) Insert a child attribute in the element "meta:name" with the value 
"ExtraField"
10) Save the XML file
11) Zip the directory
12) Rename it to testnewnotsaved.ods
13) OPen it with openoffice (2.3) then close it without saving
14) Unzip it a see the added meta data is still there. In my case it was.
15) Copy the testnewnotsaved.ods and rename it to testnewsaved.ods
16) Open it with Oo 2.3 enter some values and save the spreadsheet.
17) The added meta data will be vanished
18) Add in the element of pt 7 the attribute "meta:value-type" with the value 
string
19) Zip it into the document testnew2.ods, copy this file and rename it
testnew2saved.ods. (Copying is only done to provide an orignal document
reference. It is no step in the problem itself)
20 ) Open it in Oo 2.3 do some editing and save it
21) Unzip it and see the meta data is preserved in this case.
