this issue is a wontfix.

The printing modifies document is turned off by default now, but even if it
would still modify the document the behaviour will not be changed.

When you start the OOo from that second terminal/shell, you'll notice that the
command returns immediately. This is because it passes the stuff to the already
running instance of OOo. This is a common behaviour for multi-document
applications, be it webbrowsers or document viewers.
There is no reason that there should be two seperate instances funning for one
user - in the end that would mean every document that is launched will have a
seperate Office, making the "Quit" never works as exptected for more or less all
users but you (drlasterjr).

There is an easy solution to your problem: Just don't use the Quit
functionality, but use the "Close document" one.
You can configure both menu-entries and keyboard shortcuts for this to work.
The titlebar's "X" button closes only the current document, so this is another
way to achieve what you want.
