I like the second (and left it in the quote below). However, can text be added to reference a generic "Windows Explorer" (I do not know what it is called in Linux or Mac OS)? That might be adding unnecessary weight to the text, but since most of the users targeted by this are neophytes, we may want to consider even more overkill.

For example, "This means, for instance, that if you double click on one of these files *in Windows Explorer/Linux xxxx/Mac OS xxxx*, OpenOffice.org will open it, not the program that *automatically* opens it now.

If you are just trying out Open Office.org, you probably don't want this to
happen, so leave the boxes unchecked.  You can always open these files in
OpenOffice.org, by using 'File >> Open' and browsing to the file you want.
