I have just checked this out in OSX 10.5.6 (Leopard) and now if I associate OO
3.0 with xls, doc, and ppt, I get icons labeled with XLS, DOC, and PPT. 
However, if I now associate these with MSOFFICe (word, excel, powerpoint),or
neooffice, the icons remain the same. SO I think 10.5.6 is controlling the icon
display. This is very apparent when one looks at pdfs, which now display a
preview type of icon.
A blank document still has a "blank" icon but it has a 'doc" at the bottom of
the icon.
