I am using OpenOffice 3.0.0 on each machine. I cannot encrypt/unencrypt OpenOffice documents (ODS, ODT or ODG) using NTFS-encryption. To unencrypt an OO document I right click on the file in Explorer -> choose "Properties" -> select the "General" tab -> click the "Advanced..." button in the "Attributes" section -> deselect the "Encrypt contents to secure data" check box -> and click "OK" twice. I get a popup error box "Error Applying Attributes" with the message "The process cannot access the file because it is being used by another process". The only way I can encrypted a document is to either create it in an already encrypted folder, or copy it to an encrypted folder. And the only way I can unencrypted a document is to copy it to a non-NTFS drive (e.g. a USB memory stick). This only appears to happen with OpenOffice documents - other documents (e.g. MS Word, plain ASCII text, bitmaps, etc.) are not affected.
