There has been a time when OOo failed to generate its font-cache properly, so
more or less every second time you started OOo you got erratic results.
But furthermore: For Math-Symbols, like the = or other symbols, the font
OpenSymbol is used, not the text/variable font.
wrt the "type =, get -": Sure that it is not a zoom/hinting problems?
Unfortunately the Symbol font only has very basic hinting-info, so it might not
display as good as it should be on screen...
In case this still occurs in a released version (3.0.1 is available, and 3.1
aleady as rc), feel free to reopen the issue. (Yes, you can reopen the issue,
but of course you have to be logged in - might be that without extra privileges
you can only reopen your own issues though)
Besides a sample document, the document exported to PDF from within OOo would be
helpful.
