Sorry for "forgetting" about this issue.
The symlink is not part of the actual files, since it is created via a
postinstall script (since the packages are/were relocatable, you wouldn't know
where to point to) - the symlink is however flagged as part of the package
(%ghost directive in the specfile)
I'm going to resolve this as worksforme, since it is more or less obsolete now.
Just use -Uhv with --replacefiles (icon files are installed to the same
location, and there can only be one default icon for a mime-type) to update the
package (or manually uninstall the old one beforehand)
