Instead, I read:

I replace Orange, Apple, Melon with anything(!), and the 1,1,1 stays there. 

I type the formula in C2 over. The result becomes:
Deal    Phase   TASK
A       Apple   Apple
B       Orange  1
C       Melon   1

I copy the formula from C2 to C3 and C4. ....
Are you ready for the result:
Deal    Phase   TASK
A       Apple   Apple
B       Orange  Apple
C       Melon   Apple

In other words, the "Value" in C2 appears identically in cells C3 and C4. I 
again check the contents of 
C3 and C4. The formula in C3 is =B3 and cell C4 is =B4.

Why the value in C3 appears as Apple instead of Orange?

I copy the table from A1 to C4 into a new area ... NO CHANGE. 

I copy the table into a new tab ... NO CHANGE

I copy the whole table into a new spreadsheet. Now It works and appears just 
fine. 

It is rather troublesome to say the least.
