I'm using the ODF Signature Service for the Belgian eID Card from: https://www.e-contract.be/eid-applet-beta/ This service creates a ds:X509Data as it should be: a certificate chain starting from the citizen's certificate, then the Citizen CA certificate, and then finally the Root CA certificate. But OpenOffice.org displays "Root CA" as being the signing party. Still, when you create the 'same' signature with OpenOffice.org you indeed get 3 times the signing certificate instead of the correct certification chain under ds:KeyInfo.
