To do it for a whole Spreadsheet document go to tools-options-spreadsheet-view and disable the gridlines. To have gridlines for some cells, just set borders around them with the color of your choice. Problem in this case, you can't switch them off for printing easily. You have to remove the borders for printing. If this fits your needs, please let us know.
