It may very well be that this problem may be solved by issue 105084 (new
OpenSymbol font). A new font was already promised to us since at least 3.0 but
for various reasons (legal issues, time, ...) it was always postponed.
Finally we are on a good way with it.
The odd thing about this issue however is that nobody else could reproduce it
and thus the root cause could not properly identified...
Still, since the symbol for 'prod' and 'sum' currently are located in the
private-use are of Unicode in the StarSymbol/OpenSymbol font, there is a good
chance that the problem will vanish once the new font is in use and Math can
make use of the new code points.
Thus, until proofed otherwise, I will set this issue as depending on issue
105084 and adjust the target accordingly.
