As you say, it is because you have an environment variable in your shell's
startup-file.
Without the OOO_FORCE_DESKTOP=gnome / SAL_USE_VCLPLUGIN=gtk, OOo will only use
the gtk-look when it can detect that gnome is running.
You could add that variable to the soffice startup script, or add the variable
to your global environment variables (login-manager for example), or specify it
in the run dialog.
Nothing on OOo's side that could be done here, needs to be fixed in the desktop-
environment configuration → invalid
