I don't know what you mean by:

There is one way to set new default fonts for all new formulas to be inserted:
Open Math, and open the dialog "Format/Fonts..." using the "Modify" button you
can
now change the font settings.
If you like to have those settings applied not only for the current formula but
for all new formula you have to press the "Default" button before leaving that
dialog.
Currently there is no other way to do this.
If you find this is not sufficient you may file a request for enhancement
stating what you like to have.
