You could find it on menu Tools -> Automatic Correction Options -> Substitution tab. In the lined-up LibreOffice release (3.3.0 rc2, OOO330m18, linux, x86-64, OpenSuSE build), I note, observe the same behavior of your MAC OOo 3.3.0 rc 8, so here the three substitutions you have poited out didn't work and are not listed in the above mentioned tab.
