I had the same problem and by chance I found a thread mentioning that mail 
merge didn't work correctly if 
'show field names' was checked on the 'view' tab. In my case this was not the 
issue, but having un-checked 
everything on the 'view tab'  including 'field shading' and 'text boundaries' 
and also turned off automatic 
updating of fields in 'preferences - open office writer - general ' it now 
works correctly.

I haven't had time to figure out exactly which of the changes solves the 
problem, but for now that's a 
workaround.

There are sample documents attached to my dupe of this issue.
