Kyle, You have raised and issue bothering me as well. I, who took pre-med at Cornell, never could deal with percentages and dilutions. As well I gave Larry's email with percentage of dilustion for the Saigon cinnamon, I believe it was, to a friend who has a doctorate in chemistry/math and she couldn't figure out what he was saying either. Would someone be so kind as to give us a simple mix such as tsps of powder to a gallon of water for both the Saigon(cassia?) and regular cinnamon. The debate over Cassia vs. Cinnamon is a deeply divided one from what I've encountered, with the Culinary world at a standoff in some cases...are they equal? could be...do they contain the same oils, etc. I've no idea. But if you're using one thinking its the other, then there most likely is a difference in the % calculation of oil in the product...
