I found that the easiest way to get Kernel oops output in these situations is to set up Linux to use a serial port console (I've heard this can be done with network hardware as well, although I doubt its as reliable). If you have another computer you can connect via a serial port, look at linux/Documentation/serial-console.txt in the kernel source which has some information on how this is done. You may have to recompile your kernel to get "Console on Serial Port" option enabled. Once you trap the oops output on other computer you can save to a file, reboot your frozen machine and then run the oops through ksymoops.
