The chip has no on-board wavetable function.  A software MIDI synth
like timidity is the only choice.

If you mean the external MIDI, pass snd_enable_midi=1 to
snd-card-cmipci module.  As default it's disabled.

Do you have a set of sound fonts that are installed on a windows or mac
partition specifically for that card to use with it's onboard synth? 
There have been cases of false advertising where the capabilities are
said to be onboard but actually run through software emulation.

No idea sorry.  I have stayed away from midi up until the past couple of
months. Maybe we can find out together.
